Faire bouillir 8<br \/>\nlitres d\u2019eau dans un grand faitout, saler, puis y plonger les supr\u00eames de Janz\u00e9 et enfin, couvrir. Eteindre le feu et y laisser les filets 45 minutes environ. La viande cuira doucement avec la chaleur de l\u2019eau et restera donc tr\u00e8s moelleuse. D\u00e9tailler les \u00e9chalotes, le c\u00e9leri, le poivron, le gingembre, le tout en petits d\u00e9s.<\/p>\n<p style=\"text-align: justify;\">Dans une po\u00eale, faire chauffer l\u2019huile d\u2019olive et y jeter les l\u00e9gumes en d\u00e9s, faire revenir<br \/>\nrapidement (les l\u00e9gumes doivent rester croquants) puis y ajouter le miel, le soja, le vinaigre. Arr\u00eater la cuisson.<\/p>\n<p style=\"text-align: justify;\">Dresser les l\u00e9gumes sur le fond des assiettes, puis y d\u00e9poser des lamelles de filets de volaille, un peu de poivre du moulin ou de la poudre de piment d\u2019Espelette.
